The five reports every owner should open before staff briefing.

Friday is the shift where everything you got wrong during the week gets exposed. The reports below are the ones we open, in order, before every Friday briefing.

Same-day-last-week baseline

Not last Friday's total — last Friday's hourly. Which hour was slower than expected? That is where you will lose margin tonight if you don't staff for it.

Menu velocity

Which items sold in the first hour of dinner? That is your prep priority. Which items didn't sell at all last Friday? Consider a special.

Table turn time

Median, not average. If the median crosses 55 minutes on a busy Friday, your revenue ceiling is already capped by the room, not the kitchen.

Modifier hit rate

How often guests customize their orders. A rising modifier rate usually means the menu descriptions are not clear enough — fix the copy, not the kitchen.

Payment mix

Wallet vs. card vs. cash. Wallet share climbing quickly? Tell the floor to prompt for it — it settles instantly and shortens the final table interaction.
