How a single hero dish quietly lifts the average order for the whole menu.

The most powerful lever on your menu is not the cheapest item or the most expensive — it is the anchor. The dish you deliberately place higher, so the rest of the menu feels reasonable by comparison.

What makes a good anchor

A visually striking, story-rich dish, priced 20–40% above the category median. It doesn't have to sell in volume. Its job is to reset expectations.

Where to place it

The bystander effect

Once the anchor is set, mid-priced dishes look like value. Guests order them more, and average ticket rises 8–15% without changing anything else.
